RV Breakfast Hot Pockets

This recipe is quick and requires almost no clean-up. We make them almost every time we go camping, especially on pack-up days when we’d rather not do dishes.

Ingredients

  • 4 Whole wheat tortillas
  • 4 Eggs
  • 1-1/3 Cups Shredded Cheese
  • 8 Slices Deli Ham

Instructions

  • Lay a tortilla on a flat surface, place 2 slices of deli ham in the center of the tortilla. Place shredded cheese around the inside edges of the ham. Crack an egg into the well and fold the tortilla toward the center. Wrap in aluminum foil. Repeat for other 3 tortillas.

  • Bake in a preheated 350 deg F oven for 18-20 minutes.

Notes

Cook times on this recipe are variable. In our RV oven, the outside temperature still seems to matter. On warm days, these are done in 20 minutes, on cooler days, sometimes it takes 25 minutes.
